Ingredients
4 medium russet potatoes
1 lb sirloin steak, cut into bite-sized pieces
1 tablespoon olive oil
Salt and pepper to taste
1/2 cup shredded cheddar cheese
1/4 cup sour cream
2 tablespoons butter
2 tablespoons chopped chives
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the potatoes thoroughly, then prick them with a fork several times. Rub the potatoes with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until they are soft when pierced with a fork.
- While the potatoes are baking, heat the olive oil in a large skillet over medium-high heat. Season the steak bites with salt and pepper.
- Add the steak pieces to the skillet and cook for 4-6 minutes, or until they are browned and cooked to your preferred level of doneness.
- Once the potatoes are done, carefully cut a slit down the center of each potato and fluff the insides with a fork.
- Add a tablespoon of butter to each potato and let it melt into the flesh.
- Top each potato with shredded cheddar cheese, sour cream, steak bites, bacon bits (if using), and chopped chives. Serve immediately.
Notes
Add bacon bits for extra crunch and flavor.
Switch up the cheese by using a mix of mozzarella and sharp cheddar.
For a spicy kick, add sliced jalapeños or a sprinkle of hot sauce.
Use a different cut of steak like ribeye or filet mignon for a more decadent version.
Leftovers can be stored separately in airtight containers in the fridge. Potatoes last up to 2 days, steak bites should be eaten within 1 day.
