Description

A versatile and easy-to-make muffin recipe that is perfect for customizing with various add-ins like fruit, nuts, or chocolate chips.


Ingredients

1 3/4 cups all-purpose flour (or whole wheat pastry flour)

1/2 cup unrefined sugar (like coconut sugar or maple sugar)

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon (optional)

1 cup milk of choice (almond, oat, dairy, etc.)

1/3 cup oil (such as avocado oil, vegetable oil, or melted coconut oil)

1 tablespoon vinegar or lemon juice

1 tablespoon pure vanilla extract

1 cup add-ins (chocolate chips, blueberries, chopped nuts, shredded carrots, etc.)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon if using.
  3. In a separate bowl, whisk together the milk, oil, vinegar or lemon juice, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. Be careful not to overmix.
  5. Gently fold in your chosen add-ins (chocolate chips, fruit, nuts, etc.).
  6. Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
  7. Bake for 20–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for 10 minutes before transferring them to a wire rack to cool completely.

Notes

To make the muffins vegan, use plant-based milk and egg substitutes (like a flax egg).

For a gluten-free version, substitute the flour with a gluten-free flour blend.

Store muffins at room temperature for up to 3 days or freeze them for up to 3 months.

Feel free to customize with different sweeteners, like coconut sugar or maple syrup.
