A quick and flavorful Mediterranean Ground Beef Stir Fry packed with vibrant veggies, bold spices, and a fresh lemony finish, perfect for a satisfying and light weeknight meal.
Ingredients
1 lb (450g) ground beef
1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup Kalamata olives, pitted and sliced
1/2 cup feta cheese, crumbled
1 tsp dried oregano
1/2 tsp ground cumin
1/4 tsp paprika
Salt and black pepper, to taste
Fresh parsley or mint, chopped (for garnish)
Juice of 1 lemon
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned.
- Stir in the chopped onion and minced garlic. Cook for 3 to 4 minutes until the onion softens.
- Add dried oregano, ground cumin, paprika, salt, and black pepper. Stir well to combine.
- Mix in the cherry tomatoes and sliced Kalamata olives. Cook for another 3 to 5 minutes until the tomatoes soften slightly.
- Remove the skillet from heat. Stir in the diced cucumber, crumbled feta cheese, and lemon juice.
- Garnish with chopped fresh parsley or mint. Serve warm over rice, quinoa, or inside pita bread.
Notes
Use lean ground beef or ground turkey for a lighter version.
To make it vegan, replace beef with cooked lentils and omit or use vegan cheese instead of feta.
Add bell peppers or zucchini for extra veggies.
Sprinkle crushed red pepper flakes for some heat.
Add red wine vinegar or fresh spinach for a stronger Mediterranean flavor.
Store leftovers in an airtight container in the fridge up to 3 days and reheat gently.
