Description

Millionaire’s Rice Krispie Treats are gooey marshmallow cereal bars layered with buttery caramel and topped with rich chocolate for a decadent no-bake dessert that’s perfect for parties and special occasions.


Ingredients

6 cups Rice Krispies cereal

4 cups mini marshmallows

3 tablespoons unsalted butter

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 (11 oz) bag soft caramels, unwrapped

2 tablespoons heavy cream

1 1/2 cups semi-sweet chocolate chips

1 tablespoon coconut oil or butter


Instructions

  1. Line a 9×13-inch baking pan with parchment paper and lightly grease it.
  2. In a large pot over low heat, melt the butter. Add the mini marshmallows and stir until completely smooth. Remove from heat and stir in vanilla extract and salt.
  3. Fold in the Rice Krispies cereal and mix until evenly coated. Press the mixture firmly into the prepared pan and let cool.
  4. In a microwave-safe bowl, combine the caramels and heavy cream. Microwave in 30-second intervals, stirring between each, until smooth. Pour over the cooled cereal layer and spread evenly. Let set for 20–30 minutes.
  5. Melt the chocolate chips with coconut oil in 30-second microwave intervals, stirring until smooth. Spread evenly over the caramel layer.
  6. Refrigerate for at least 1 hour or until fully set. Slice into squares and serve.

Notes

Grease hands or spatula before pressing cereal mixture into the pan to prevent sticking.

Sprinkle flaky sea salt over the chocolate layer for a sweet-salty finish.

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.

Freeze tightly wrapped bars for up to 2 months and thaw overnight in the refrigerator.

Avoid microwaving after setting, as caramel and chocolate may melt unevenly.
