Description
Mint Chocolate Lasagna is a delightful no-bake dessert that combines refreshing minty cream, smooth chocolate, and a crunchy cookie crust. This treat is layered to perfection and makes for an indulgent dessert that’s perfect for any occasion.
Ingredients
1 package of chocolate sandwich cookies (about 15–20 cookies)
1/4 cup butter, melted
1 package (8 oz) cream cheese, softened
1/4 cup powdered sugar
2 cups whipped topping (like Cool Whip)
2 cups milk
1 package (3.4 oz) instant vanilla pudding mix
1/2 teaspoon peppermint extract
1/2 cup mini chocolate chips
2–3 drops green food coloring (optional)
Instructions
- Crush the chocolate sandwich cookies into fine crumbs. You can place the cookies in a plastic bag and roll over them with a rolling pin or use a food processor.
- In a medium bowl, combine the crushed cookies with the melted butter. Stir until the mixture is well combined, then press it into the bottom of a 9×13-inch baking dish to form a crust.
- In a separate bowl, beat the cream cheese with the powdered sugar until it becomes smooth and creamy. Add 1 cup of whipped topping and mix well until combined. Spread this cream cheese mixture evenly over the cookie crust.
- In another bowl, whisk together the milk and vanilla pudding mix until it begins to thicken, which usually takes about 2 minutes. Stir in the peppermint extract and green food coloring if desired. Spread the pudding mixture over the cream cheese layer.
- Top the pudding layer with the remaining whipped topping, spreading it evenly across the surface.
- Sprinkle mini chocolate chips on top of the whipped topping layer.
- Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to set and meld together.
Notes
If you’d like to mix things up, consider adding a chocolate layer by melting some chocolate and spreading a thin layer over the pudding before adding the whipped topping.
For a richer, chocolatey crust, swap out the chocolate sandwich cookies for Oreos.
Crushed peppermint bark or mint chocolate pieces can be added to the whipped topping for a more intense mint flavor.
If you’re a huge fan of mint, add a bit more peppermint extract to the pudding or cream cheese layer for extra minty goodness.
The dessert can be made a day before serving for the best flavor and texture.
