Description

Mint Chocolate Lasagna is a delightful no-bake dessert that combines refreshing minty cream, smooth chocolate, and a crunchy cookie crust. This treat is layered to perfection and makes for an indulgent dessert that’s perfect for any occasion.


Ingredients

1 package of chocolate sandwich cookies (about 1520 cookies)

1/4 cup butter, melted

1 package (8 oz) cream cheese, softened

1/4 cup powdered sugar

2 cups whipped topping (like Cool Whip)

2 cups milk

1 package (3.4 oz) instant vanilla pudding mix

1/2 teaspoon peppermint extract

1/2 cup mini chocolate chips

23 drops green food coloring (optional)


Instructions

  1. Crush the chocolate sandwich cookies into fine crumbs. You can place the cookies in a plastic bag and roll over them with a rolling pin or use a food processor.
  2. In a medium bowl, combine the crushed cookies with the melted butter. Stir until the mixture is well combined, then press it into the bottom of a 9×13-inch baking dish to form a crust.
  3. In a separate bowl, beat the cream cheese with the powdered sugar until it becomes smooth and creamy. Add 1 cup of whipped topping and mix well until combined. Spread this cream cheese mixture evenly over the cookie crust.
  4. In another bowl, whisk together the milk and vanilla pudding mix until it begins to thicken, which usually takes about 2 minutes. Stir in the peppermint extract and green food coloring if desired. Spread the pudding mixture over the cream cheese layer.
  5. Top the pudding layer with the remaining whipped topping, spreading it evenly across the surface.
  6. Sprinkle mini chocolate chips on top of the whipped topping layer.
  7. Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to set and meld together.

Notes

If you’d like to mix things up, consider adding a chocolate layer by melting some chocolate and spreading a thin layer over the pudding before adding the whipped topping.

For a richer, chocolatey crust, swap out the chocolate sandwich cookies for Oreos.

Crushed peppermint bark or mint chocolate pieces can be added to the whipped topping for a more intense mint flavor.

If you’re a huge fan of mint, add a bit more peppermint extract to the pudding or cream cheese layer for extra minty goodness.
