Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
1/2 cup brown sugar
1/2 cup chopped pecans or walnuts
1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and grease a bundt pan thoroughly.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with sour cream, beginning and ending with the dry ingredients. Mix until just combined.
- In a small bowl, combine brown sugar, chopped nuts, and cinnamon to make the filling and topping.
- Pour half the batter into the prepared bundt pan and spread evenly.
- Sprinkle half of the cinnamon-nut mixture over the batter.
- Spread the remaining batter on top and sprinkle with the rest of the cinnamon-nut mixture.
- Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
- Serve warm or at room temperature with coffee or tea.
Notes
Swap pecans or walnuts with sliced almonds or omit for a smoother texture.
Add a vanilla glaze or powdered sugar dusting for a festive look.
A pinch of nutmeg can enhance the cinnamon flavor.
