Description
These No Bake Chocolate Caramel Cheesecake Bites combine smooth cream cheese, rich caramel, and indulgent chocolate, all layered on a buttery graham cracker crust. They’re easy to make and require no baking.
Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup melted coconut oil or butter
8 oz cream cheese, softened
1/2 cup powdered sugar
1/2 cup heavy cream, whipped
1/2 cup caramel sauce (store-bought or homemade)
1/2 cup dark chocolate chips, melted
Sea salt, for sprinkling
Instructions
- In a medium bowl, combine graham cracker crumbs and melted coconut oil until evenly moistened.
- Press the crumb mixture into the bottom of a lined mini muffin tin or silicone mold, forming a firm crust. Refrigerate for about 10 minutes.
- In a large bowl, beat softened cream cheese and powdered sugar until smooth and creamy.
- Gently fold in whipped heavy cream, ensuring it’s fully incorporated.
- Spoon a layer of the cream cheese mixture over the crust in each mold.
- Drizzle caramel sauce over the cream cheese layer, then add another spoonful of cream cheese mixture to cover the caramel.
- Freeze the bites for 30 minutes to set.
- Once set, remove the bites from the freezer and drizzle melted chocolate over the top of each one.
- Sprinkle each bite lightly with sea salt and refrigerate for at least 1 hour before serving to allow the flavors to meld.
Notes
Crust variations: Swap graham cracker crumbs for crushed Oreos or gluten-free cookies.
Chocolate variation: Use milk chocolate chips for a milder flavor.
Caramel: Homemade caramel sauce adds extra richness, but store-bought works just as well.
