Description

These No Bake Chocolate Caramel Cheesecake Bites combine smooth cream cheese, rich caramel, and indulgent chocolate, all layered on a buttery graham cracker crust. They’re easy to make and require no baking.


Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup melted coconut oil or butter

8 oz cream cheese, softened

1/2 cup powdered sugar

1/2 cup heavy cream, whipped

1/2 cup caramel sauce (store-bought or homemade)

1/2 cup dark chocolate chips, melted

Sea salt, for sprinkling


Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted coconut oil until evenly moistened.
  2. Press the crumb mixture into the bottom of a lined mini muffin tin or silicone mold, forming a firm crust. Refrigerate for about 10 minutes.
  3. In a large bowl, beat softened cream cheese and powdered sugar until smooth and creamy.
  4. Gently fold in whipped heavy cream, ensuring it’s fully incorporated.
  5. Spoon a layer of the cream cheese mixture over the crust in each mold.
  6. Drizzle caramel sauce over the cream cheese layer, then add another spoonful of cream cheese mixture to cover the caramel.
  7. Freeze the bites for 30 minutes to set.
  8. Once set, remove the bites from the freezer and drizzle melted chocolate over the top of each one.
  9. Sprinkle each bite lightly with sea salt and refrigerate for at least 1 hour before serving to allow the flavors to meld.

Notes

Crust variations: Swap graham cracker crumbs for crushed Oreos or gluten-free cookies.

Chocolate variation: Use milk chocolate chips for a milder flavor.
