Description

These No Bake Coconut Cream Balls are a quick, easy, and wholesome treat. Made with shredded coconut, coconut cream, and sweetened with honey or maple syrup, they offer a creamy texture and natural sweetness. No baking required, and customizable with toppings for extra crunch.


Ingredients

1 cup shredded unsweetened coconut

1/2 cup coconut cream

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1/4 cup almond flour (optional, for texture)

A pinch of sea salt

Extra shredded coconut or chopped nuts for rolling (optional)


Instructions

  1. In a medium bowl, combine shredded coconut, coconut cream, honey (or maple syrup), vanilla extract, almond flour (if using), and sea salt.
  2. Mix everything together until the mixture is sticky enough to hold its shape. If it’s too wet, add a bit more shredded coconut; if it’s too dry, add a little more coconut cream.
  3. Using your hands or a small cookie scoop, form the mixture into bite-sized balls.
  4. Roll each ball in extra shredded coconut or chopped nuts for an optional coating.
  5. Place the balls on a lined tray and refrigerate for at least 1 hour to firm up.
  6. Store in an airtight container in the fridge for up to a week.

Notes

If using sweetened coconut, reduce the amount of honey or maple syrup to balance the sweetness.

If you don’t have coconut cream, you can substitute it with full-fat coconut milk or cashew cream, though the texture may differ slightly.

To make nut-free, leave out the almond flour and chopped nuts for rolling.
