These No Bake Coconut Cream Balls are a quick, easy, and wholesome treat. Made with shredded coconut, coconut cream, and sweetened with honey or maple syrup, they offer a creamy texture and natural sweetness. No baking required, and customizable with toppings for extra crunch.
Ingredients
1 cup shredded unsweetened coconut
1/2 cup coconut cream
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
1/4 cup almond flour (optional, for texture)
A pinch of sea salt
Extra shredded coconut or chopped nuts for rolling (optional)
Instructions
- In a medium bowl, combine shredded coconut, coconut cream, honey (or maple syrup), vanilla extract, almond flour (if using), and sea salt.
- Mix everything together until the mixture is sticky enough to hold its shape. If it’s too wet, add a bit more shredded coconut; if it’s too dry, add a little more coconut cream.
- Using your hands or a small cookie scoop, form the mixture into bite-sized balls.
- Roll each ball in extra shredded coconut or chopped nuts for an optional coating.
- Place the balls on a lined tray and refrigerate for at least 1 hour to firm up.
- Store in an airtight container in the fridge for up to a week.
Notes
If using sweetened coconut, reduce the amount of honey or maple syrup to balance the sweetness.
If you don’t have coconut cream, you can substitute it with full-fat coconut milk or cashew cream, though the texture may differ slightly.
To make nut-free, leave out the almond flour and chopped nuts for rolling.
These balls can be stored in the freezer for up to 3 months.
