Ingredients
1 cup unsalted butter, melted
2 cups graham cracker crumbs
2 cups powdered sugar
1 1/2 cups creamy peanut butter
1 1/2 cups semi-sweet chocolate chips
1/4 cup creamy peanut butter (for chocolate topping)
Instructions
- Line a 9×13-inch baking dish with parchment paper, leaving overhang on the sides for easy removal.
- In a large mixing bowl, combine melted butter, graham cracker crumbs, powdered sugar, and 1 1/2 cups peanut butter. Stir until smooth and fully incorporated.
- Press the mixture evenly into the prepared baking dish and smooth the top with a spatula.
- In a microwave-safe bowl, melt the chocolate chips with the remaining 1/4 cup peanut butter in 30-second intervals, stirring between each, until smooth.
- Pour the melted chocolate over the peanut butter layer and spread evenly to cover the surface.
- Refrigerate for at least 2 hours, or until firm and fully set.
- Lift the bars out using the parchment overhang, slice into 24 squares or rectangles, and serve chilled or slightly softened at room temperature.
Notes
For a crunchier texture, use crunchy peanut butter instead of creamy.
Dark chocolate chips can be substituted for a richer, less sweet flavor.
Sprinkle sea salt on top before chilling for a sweet and salty contrast.
Store in an airtight container in the refrigerator for up to 1 week.
Freeze for up to 3 months with parchment paper between layers; thaw before serving.
For clean slices, chill thoroughly and wipe the knife clean between cuts.
