Creamy, dreamy no-bake pink velvet cheesecake bites with a buttery graham cracker crust and a sweet, slightly tangy filling. Perfectly portioned and beautifully pink, these treats are ideal for parties, holidays, or an easy make-ahead dessert.
Ingredients
1 1/2 cups graham cracker crumbs
5 tablespoons unsalted butter, melted
12 oz cream cheese, softened
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
1 tablespoon milk (as needed for creaminess)
1 teaspoon lemon juice
1–2 teaspoons pink food coloring
1/2 cup white chocolate chips, melted (optional, for coating or drizzle)
Sprinkles for garnish (optional)
Instructions
- In a medium bowl, combine graham cracker crumbs and melted butter. Stir until the mixture resembles wet sand and is evenly coated.
- Line a mini muffin tin or small baking dish with parchment paper. Press about one tablespoon of the crust mixture firmly into each cavity. Refrigerate for 15–20 minutes to firm up.
- In a large mixing bowl, beat the softened cream cheese until smooth and fluffy.
- Add powdered sugar, vanilla extract, lemon juice, and pink food coloring. Beat until creamy and fully combined. Add milk as needed to achieve a smooth consistency.
- Spoon or pipe the cheesecake filling over the chilled crusts and smooth the tops with a spatula.
- Refrigerate for 2–3 hours, or until fully set and firm.
- Carefully remove from the pan. Dip in melted white chocolate or drizzle over the tops if desired. Add sprinkles.
- Return to the refrigerator for 10–15 minutes to allow toppings to set before serving.
