Description
A wholesome and moist cake made with oats, apple, and carrot, naturally sweetened with applesauce and maple syrup. Perfect for breakfast, snack, or a healthy dessert.
Ingredients
1 cup rolled oats
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 cup unsweetened applesauce
2 eggs
1 tsp vanilla extract
1/3 cup honey or maple syrup
1 cup grated carrot
1 cup grated apple
1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mix rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk together applesauce, eggs, vanilla extract, and honey or maple syrup.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the grated carrot, grated apple, and chopped nuts (if using).
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Swap applesauce with mashed banana for a different flavor.
Add raisins or dried cranberries for extra texture.
Sprinkle in chia seeds or ground flaxseed for protein boost.
Leave out nuts for a nut-free version.
Use almond flour and gluten-free oats for a gluten-free option.
