Ingredients

1 tablespoon olive oil

14 oz (400g) smoked sausage or andouille, sliced into rounds

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

2 teaspoons Cajun seasoning (plus more to taste)

8 oz (225g) uncooked penne or short pasta

2 cups chicken broth

1 cup heavy cream (or half-and-half)

½ cup grated Parmesan cheese

Salt and pepper, to taste

2 tablespoons chopped parsley (for garnish)


Instructions

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Add sliced sausage and cook for 3–4 minutes until browned. Remove and set aside.
  3. In the same pot, sauté onion, garlic, and bell pepper for 2–3 minutes until softened.
  4. Stir in Cajun seasoning, uncooked pasta, chicken broth, and cream. Mix well and bring to a boil.
  5. Reduce heat to medium-low, cover, and simmer for 10–12 minutes, stirring occasionally, until pasta is tender and sauce has thickened.
  6. Stir in Parmesan cheese and cooked sausage. Season with salt and pepper to taste.
  7. Garnish with chopped parsley and a sprinkle of Cajun seasoning before serving.
