Description
Crispy oven-fried potatoes and caramelized onions make a simple, comforting side dish. The natural sweetness of the onions pairs perfectly with golden, flavorful potatoes.
Ingredients
4 medium-sized potatoes, sliced into wedges or rounds
1 large onion, sliced into thin rings
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon black pepper
1 teaspoon dried rosemary or thyme (optional)
Salt to taste
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
- Combine the sliced potatoes and onions in a large mixing bowl.
- Drizzle olive oil over the potatoes and onions, then sprinkle garlic powder, paprika, black pepper, rosemary or thyme if using, and salt. Toss well to coat evenly.
- Arrange the seasoned potatoes and onions in a single layer on the prepared baking sheet, avoiding overcrowding.
- Bake for 30–40 minutes, turning halfway through for even browning.
- Remove from the oven when potatoes are golden and crispy and onions are caramelized. Serve hot.
Notes
Substitute smoked paprika for a deeper flavor or add Parmesan cheese in the last 5 minutes for a cheesy twist.
Add bell peppers or zucchini for extra color and nutrients.
Soak potato slices in cold water for 30 minutes before seasoning for extra crispiness, then pat dry.
Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven at 400°F (200°C) for 10–15 minutes.
