Ingredients
2 large boneless, skinless chicken breasts (or 4 cutlets)
½ cup grated Parmesan cheese
½ cup breadcrumbs (Italian seasoned or plain + 1 tsp Italian seasoning)
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
2 large eggs
2 tablespoons milk
¼ cup all-purpose flour (for dredging)
3 tablespoons olive oil or butter (for pan-frying)
Optional: lemon wedges and chopped parsley for garnish
Instructions
- Slice the chicken breasts horizontally to create thin cutlets or pound them to about ½ inch thick. Pat dry and lightly season both sides with salt and pepper.
- Set up three dredging bowls: place flour in the first bowl; whisk eggs and milk in the second bowl; mix Parmesan, breadcrumbs, garlic powder, salt, and pepper in the third bowl.
- Dredge each piece of chicken in flour and shake off excess. Dip into the egg mixture, then coat thoroughly in the Parmesan breadcrumb mixture, pressing firmly so the coating adheres.
- Heat olive oil or butter in a large skillet over medium heat. Cook the chicken for 3–4 minutes per side until golden brown and the internal temperature reaches 165°F (74°C). Avoid overcrowding the pan and cook in batches if needed.
- Let the chicken rest for a few minutes before serving. Garnish with fresh lemon juice and chopped parsley if desired.
Notes
For a baked version, cook at 400°F (200°C) for 18–22 minutes, flipping halfway through.
Add panko breadcrumbs for extra crispiness.
Turn it into Chicken Parmesan by topping with marinara sauce and mozzarella, then broiling until bubbly.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in the oven or air fryer at 350°F (175°C) for 8–10 minutes to maintain crispiness.
