Description

Ingredients

1 ½ cups all-purpose flour

¾ cup granulated sugar

1 tablespoon baking powder

½ teaspoon cinnamon

¼ teaspoon salt

1/3 cup unsalted butter, melted

1 large egg

½ cup milk

1 teaspoon vanilla extract

1 cup fresh or frozen peaches, chopped

2 tablespoons brown sugar (for topping)

1 tablespoon cinnamon (for topping)


Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, mix the melted butter, egg, milk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the chopped peaches.
  6. Divide the batter evenly into the muffin cups, filling each about 2/3 full.
  7. In a small bowl, mix together the brown sugar and cinnamon for the topping. Sprinkle this mixture evenly over the tops of the muffins.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool for a few minutes before serving.

Notes

For a gluten-free option, substitute the all-purpose flour with a 1:1 gluten-free baking flour blend.

For a dairy-free version, use almond milk or coconut milk, and a non-dairy butter substitute.

For added flavor and texture, you can fold in some chopped pecans or walnuts with the peaches.
