Ingredients
1 ½ cups all-purpose flour
¾ cup granulated sugar
1 tablespoon baking powder
½ teaspoon cinnamon
¼ teaspoon salt
1/3 cup unsalted butter, melted
1 large egg
½ cup milk
1 teaspoon vanilla extract
1 cup fresh or frozen peaches, chopped
2 tablespoons brown sugar (for topping)
1 tablespoon cinnamon (for topping)
Instructions
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, mix the melted butter, egg, milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the chopped peaches.
- Divide the batter evenly into the muffin cups, filling each about 2/3 full.
- In a small bowl, mix together the brown sugar and cinnamon for the topping. Sprinkle this mixture evenly over the tops of the muffins.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool for a few minutes before serving.
Notes
For a gluten-free option, substitute the all-purpose flour with a 1:1 gluten-free baking flour blend.
For a dairy-free version, use almond milk or coconut milk, and a non-dairy butter substitute.
For added flavor and texture, you can fold in some chopped pecans or walnuts with the peaches.
These muffins freeze well for up to 2-3 months.
