Description

Peach Pie Cruffins are a delightful combination of buttery, soft, croissant-like layers filled with a fresh peach filling and a hint of cinnamon. They’re perfect for breakfast, dessert, or a comforting treat any time of day.


Ingredients

2 cups fresh peaches, peeled and diced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1/2 teaspoon ground cinnamon

1 package (8 oz) refrigerated crescent roll dough

1/4 cup melted butter

2 tablespoons brown sugar

1/2 teaspoon vanilla extract

Pinch of salt


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, combine the diced peaches, granulated sugar, lemon juice, cornstarch, and cinnamon. Cook over medium heat for 5-7 minutes, stirring frequently until the mixture thickens and the peaches soften. Remove from heat and set aside to cool.
  3. Unroll the crescent roll dough onto a flat surface. Pinch the seams together to create one large sheet of dough.
  4. Brush the dough with melted butter and sprinkle with brown sugar and vanilla extract.
  5. Spoon a generous amount of the peach mixture onto the dough, spreading it evenly.
  6. Roll the dough into a tight log, then slice into 6-8 equal pieces.
  7. Arrange the pieces upright in a muffin tin, pressing gently to form cruffin shapes.
  8. Bake for 18-20 minutes, or until the tops are golden and the cruffins are puffed.
  9. Allow to cool slightly before serving. Enjoy!

Notes

Store leftover cruffins in an airtight container at room temperature for up to two days.

If using frozen peaches, thaw and drain any excess liquid before use.

Puff pastry can be used in place of crescent roll dough for an even flakier texture.

Can be frozen for up to a month and reheated at 350°F for 10 minutes.
