Ingredients
2 cups fresh pineapple chunks
2 medium cucumbers, thinly sliced
1/4 red onion, thinly sliced
2 tbsp fresh cilantro, chopped
1 small jalapeño, seeded and minced (optional)
2 tbsp fresh lime juice
1 tbsp honey or maple syrup
1/4 tsp salt
1/8 tsp black pepper
Instructions
- In a large bowl, combine pineapple, cucumber, red onion, cilantro, and jalapeño (if using).
- In a small bowl, whisk together lime juice, honey (or maple syrup), salt, and pepper until well blended.
