Ingredients

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 cup pistachio pudding mix (not the instant type)

1/4 cup unsalted pistachios, finely chopped (optional)

8 oz cream cheese, softened (for frosting)

1/4 cup unsalted butter, softened (for frosting)

2 cups powdered sugar (for frosting)

1 teaspoon vanilla extract (for frosting)

Pinch of salt (for frosting)


Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper or lightly grease it.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy and smooth, about 2-3 minutes.
  4. Add the egg and vanilla extract, and beat until fully combined.
  5. Stir in the pistachio pudding mix until evenly incorporated.
  6. Gradually add the dry ingredients into the wet mixture, mixing until just combined. Fold in chopped pistachios if using.
  7. Spread the dough evenly into the prepared baking pan and smooth the top with a spatula.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely in the pan on a wire rack.
  9. While the bars are cooling, prepare the frosting: In a medium bowl, beat together the cream cheese and butter until smooth.
  10. Gradually add powdered sugar, vanilla extract, and a pinch of salt. Continue beating until fluffy and smooth.
  11. Once the bars have cooled, spread the frosting evenly over the top.
