Ingredients

1 baguette, sliced into 1/2-inch pieces

1 tablespoon olive oil

1 cup whole milk ricotta cheese

1 teaspoon lemon zest

12 teaspoons honey (plus more for drizzling)

1/2 teaspoon sea salt

2 ripe peaches, thinly sliced

Fresh basil leaves, for garnish

Freshly cracked black pepper, optional


Instructions

  1. Preheat the oven to 375°F (190°C). Arrange baguette slices on a baking sheet and lightly brush with olive oil.
  2. Toast the slices in the oven for 8–10 minutes until golden and crisp. Let cool slightly.
  3. In a bowl, whip the ricotta with lemon zest, honey, and sea salt until light and creamy (2–3 minutes by hand or 1 minute with a hand mixer).
