Ingredients
1 cup cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/4 cup heavy cream
1/2 cup fresh raspberries, mashed
1/2 cup graham cracker crumbs
1/4 cup unsalted butter, melted
Fresh raspberries for topping
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are evenly coated with butter.
- Press the graham cracker mixture into the bottom of a mini muffin tin, filling each cup about halfway. Bake for 8-10 minutes or until the crust turns lightly golden. Remove from the oven and let cool.
- In a separate bowl, beat the cream cheese, powdered sugar, vanilla extract, and heavy cream together until smooth and creamy.
- Gently fold in the mashed raspberries until fully incorporated into the cream cheese mixture.
- Spoon the cream cheese mixture onto the cooled graham cracker crusts, filling each cup to the top.
- Refrigerate for at least 2 hours to set and firm up the filling.
- Before serving, garnish each bite with a fresh raspberry on top.
Notes
If fresh raspberries aren’t available, you can substitute with other berries like strawberries, blueberries, or blackberries.
For a chocolatey twist, drizzle melted chocolate over the top of each bite before serving.
Add a layer of chocolate ganache over the graham cracker crust for a richer flavor.
Store in the refrigerator for up to 3-4 days.
These bites actually taste better after being refrigerated for a few hours or overnight.
