Description

These Raspberry Cream Cheese Bites are a delightful treat with a buttery graham cracker crust, a rich cream cheese filling, and fresh raspberries on top. Perfect for a light snack or dessert, these bites combine creamy and tangy flavors with a burst of freshness from the raspberries.


Ingredients

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup heavy cream

1/2 cup fresh raspberries, mashed

1/2 cup graham cracker crumbs

1/4 cup unsalted butter, melted

Fresh raspberries for topping


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are evenly coated with butter.
  3. Press the graham cracker mixture into the bottom of a mini muffin tin, filling each cup about halfway. Bake for 8-10 minutes or until the crust turns lightly golden. Remove from the oven and let cool.
  4. In a separate bowl, beat the cream cheese, powdered sugar, vanilla extract, and heavy cream together until smooth and creamy.
  5. Gently fold in the mashed raspberries until fully incorporated into the cream cheese mixture.
  6. Spoon the cream cheese mixture onto the cooled graham cracker crusts, filling each cup to the top.
  7. Refrigerate for at least 2 hours to set and firm up the filling.
  8. Before serving, garnish each bite with a fresh raspberry on top.

Notes

If fresh raspberries aren’t available, you can substitute with other berries like strawberries, blueberries, or blackberries.

For a chocolatey twist, drizzle melted chocolate over the top of each bite before serving.

Add a layer of chocolate ganache over the graham cracker crust for a richer flavor.

Store in the refrigerator for up to 3-4 days.

These bites actually taste better after being refrigerated for a few hours or overnight.
