Ingredients
2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons granulated sugar
2 large eggs
1 3/4 cups buttermilk
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
1 tablespoon red food coloring (liquid or gel)

Instructions
- Preheat the waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and sugar.
- In another bowl, beat the eggs, then whisk in buttermilk, melted butter, vanilla extract, and red food coloring until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix.
- Lightly grease the waffle iron with oil or non-stick spray.
- Pour in the batter (amount depending on waffle maker size) and cook until crisp and cooked through.
- Serve the waffles warm with your favorite toppings.
Notes
Use a homemade buttermilk substitute by mixing 1 tbsp lemon juice or vinegar with 1 ¾ cups of milk.
For a deeper chocolate flavor, slightly increase the cocoa powder.
To make vegan, substitute plant-based milk, egg replacer, and vegan butter.
