Ingredients
1 cup unsweetened coconut cream
1/2 cup freshly squeezed orange juice
1 tablespoon orange zest
2 tablespoons honey
1 teaspoon vanilla extract
1 tablespoon cornstarch

Instructions
- In a medium saucepan, whisk together the coconut cream, freshly squeezed orange juice, orange zest, honey, vanilla extract, cornstarch, and a pinch of salt until the mixture is completely smooth with no lumps.
- Place the saucepan over medium heat and cook the mixture while stirring constantly to prevent sticking.
- Continue stirring as the mixture warms and begins to thicken.
- Once thickened, cook for an additional 1 to 2 minutes while stirring until the mixture reaches a smooth pudding-like consistency.
- Remove the saucepan from the heat and pour the mixture into serving glasses or small dessert bowls.
- Allow the dessert to cool slightly at room temperature.
- Cover and refrigerate for at least 2 hours until fully set and creamy.
- Before serving, garnish with extra orange zest or toasted coconut if desired.
Notes
Add a splash of lime juice along with the orange juice for a brighter tropical citrus flavor.
Stir in a small amount of toasted shredded coconut after cooking for added texture.
Maple syrup or agave syrup can be used instead of honey for a different sweetness profile.
Mix a little lemon zest with the orange zest for a more vibrant citrus aroma.
