Description

A light and creamy coconut dessert brightened with fresh orange juice and zest. This smooth pudding-like treat offers a refreshing citrus flavor balanced with silky coconut richness.


Ingredients

1 cup unsweetened coconut cream

1/2 cup freshly squeezed orange juice

1 tablespoon orange zest

2 tablespoons honey

1 teaspoon vanilla extract

1 tablespoon cornstarch

Pinch of salt


Instructions

  1. In a medium saucepan, whisk together the coconut cream, freshly squeezed orange juice, orange zest, honey, vanilla extract, cornstarch, and a pinch of salt until the mixture is completely smooth with no lumps.
  2. Place the saucepan over medium heat and cook the mixture while stirring constantly to prevent sticking.
  3. Continue stirring as the mixture warms and begins to thicken.
  4. Once thickened, cook for an additional 1 to 2 minutes while stirring until the mixture reaches a smooth pudding-like consistency.
  5. Remove the saucepan from the heat and pour the mixture into serving glasses or small dessert bowls.
  6. Allow the dessert to cool slightly at room temperature.
  7. Cover and refrigerate for at least 2 hours until fully set and creamy.
  8. Before serving, garnish with extra orange zest or toasted coconut if desired.

Notes

Add a splash of lime juice along with the orange juice for a brighter tropical citrus flavor.

Stir in a small amount of toasted shredded coconut after cooking for added texture.

Maple syrup or agave syrup can be used instead of honey for a different sweetness profile.

Mix a little lemon zest with the orange zest for a more vibrant citrus aroma.

Store covered in the refrigerator for up to 3 days.
