Description

Ingredients

1 cup fresh or frozen cherries, pitted

2 tablespoons sugar

1/2 cup unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

3/4 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/4 teaspoon salt

1/2 teaspoon baking powder

1/2 cup dark chocolate chips (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Toss the pitted cherries with 2 tablespoons of sugar and spread them out on a baking sheet. Roast for 15-20 minutes until caramelized and slightly shriveled. Remove from the oven and set aside.
  3. In a large bowl, whisk the melted butter and granulated sugar until combined.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder.
