Ingredients
1 whole garlic bulb
1 teaspoon olive oil
1/2 cup mayonnaise (vegan mayo if desired)
1 tablespoon lemon juice
1/2 teaspoon Dijon mustard
Salt to taste
Freshly ground black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- Slice the top off the garlic bulb to expose the cloves. Drizzle with olive oil and wrap in foil.
- Roast the garlic in the oven for 35–40 minutes until soft, golden, and fragrant.
- Let garlic cool slightly, then squeeze the cloves out of their skins into a bowl and mash into a smooth paste.
- In another bowl, whisk together mayonnaise, lemon juice, Dijon mustard, mashed garlic, salt, and pepper until smooth and creamy.
- Taste and adjust seasoning as needed.
- Refrigerate for at least 30 minutes to let the flavors meld before serving.
