Description

Rich, no-bake chocolate Rum Balls made with vanilla wafers, cocoa, nuts, and dark rum. Perfect for the holidays, gifting, or anytime you want a quick and indulgent treat.


Ingredients

2 ½ cups crushed vanilla wafer cookies (about 11 oz)

1 cup powdered sugar

2 tablespoons unsweetened cocoa powder

1 cup finely chopped pecans or walnuts

½ cup dark rum

2 tablespoons light corn syrup

Optional: extra powdered sugar or cocoa for rolling


Instructions

  1. In a large mixing bowl, combine the crushed vanilla wafers, powdered sugar, cocoa powder, and chopped nuts.
  2. Add the dark rum and light corn syrup to the dry mixture and stir until well combined and sticky.
  3. Roll the mixture into 1-inch balls using your hands, aiming for uniform size.
  4. Optional: Roll the formed balls in additional powdered sugar or cocoa powder for coating.
  5. Place the balls on a parchment-lined tray.
  6. Refrigerate for at least 2 hours to allow the flavors to meld and the texture to firm up.

Notes

For a different twist, substitute dark rum with spiced rum or bourbon.

To make it nut-free, omit nuts and increase the crushed cookies.
