A festive, no-bake dessert inspired by the classic Shamrock Shake, this layered lasagna features a minty green pudding, fluffy cream cheese layer, and an Oreo cookie crust—perfect for St. Patrick’s Day or anytime you’re craving a cool, minty treat.


Ingredients

36 Oreo cookies, crushed

6 tablespoons melted butter

8 ounces cream cheese, softened

1/2 cup powdered sugar

2 cups whipped topping (e.g., Cool Whip)

1 (3.4‑ounce) package instant vanilla pudding mix

1 1/2 cups milk

1/2 teaspoon mint extract

Green food coloring, a few drops as needed

1 cup whipped topping (for topping)

Chocolate chips, for garnish

Green sprinkles, for garnish


Instructions

  1. Crush the Oreo cookies into fine crumbs using a food processor or a zip-top bag and rolling pin.
  2. Mix the crushed Oreos with melted butter until combined, then press into the bottom of a 9×13-inch dish to form a crust. Chill in the fridge.
  3. In a medium bowl, beat softened cream cheese with powdered sugar until smooth. Fold in 2 cups of whipped topping.
  4. Spread the cream cheese mixture over the chilled Oreo crust evenly.
  5. In another bowl, whisk together the pudding mix, milk, mint extract, and green food coloring until thickened.
  6. Spread the mint pudding layer over the cream cheese layer.
  7. Top with the remaining whipped topping and smooth it out with a spatula.
  8. Sprinkle with chocolate chips and green sprinkles for garnish.
  9. Cover and refrigerate for at least 4 hours or overnight until fully set.
  10. Slice into squares and serve chilled.
