Description
This quick and flavorful stir-fry features tender seared beef and crisp baby bok choy tossed in a savory garlic soy glaze. Perfect for a healthy and satisfying weeknight dinner.
Ingredients
1 lb flank steak or sirloin, thinly sliced against the grain
3 heads baby bok choy, halved lengthwise
2 tablespoons vegetable oil
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
¼ cup soy sauce
1 tablespoon oyster sauce
1 teaspoon sugar
1 teaspoon cornstarch mixed with 2 tablespoons water
½ teaspoon black pepper
Optional: red chili flakes for heat
Instructions
- Heat 1 tablespoon of oil in a hot skillet or wok over high heat.
- Add the beef slices in a single layer and sear for 1–2 minutes per side until browned but still tender. Remove and set aside.
- Pour in the remaining oil, then sauté the garlic and ginger for about 30 seconds until fragrant.
- Add the bok choy and stir-fry for 2–3 minutes until vibrant green and lightly charred.
- Return the beef to the pan. Add soy sauce, oyster sauce, sugar, and black pepper.
- Stir in the cornstarch slurry and toss until the sauce thickens and coats the beef and bok choy evenly.
- Remove from heat and serve hot.
Notes
Swap beef for chicken, shrimp, or tofu for variation.
Add sesame oil before serving for extra flavor.
Add bell peppers or snap peas for extra crunch.
Use gluten-free sauces for a gluten-free version.
