Description
A hearty and comforting Sloppy Joe Casserole made with seasoned ground beef, tender pasta, rich sloppy joe sauce, and a bubbly melted cheese topping. Perfect for busy weeknights and family dinners.
Ingredients
1 lb ground beef (or ground turkey)
1 small onion, diced
1 green bell pepper, diced (optional)
2 cloves garlic, minced
1 can (15 oz) sloppy joe sauce
2 cups uncooked pasta (elbow macaroni or rotini)
1½ cups shredded cheddar cheese
½ cup mozzarella cheese (optional)
Salt and pepper, to taste
1 tbsp olive oil (if needed for sautéing)
Chopped parsley (optional garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the pasta in salted water until al dente. Drain and set aside.
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
- Add the diced onion, bell pepper, and minced garlic. Sauté for about 5 minutes until softened.
- Stir in the sloppy joe sauce and simmer for 5 to 7 minutes.
- Combine the cooked pasta with the meat mixture in a large bowl or greased 9×13-inch baking dish.
- Stir in 1 cup of shredded cheddar cheese and mix well.
- Sprinkle the remaining cheddar and mozzarella evenly over the top.
- Bake uncovered for 15 to 20 minutes, until the cheese is melted and bubbly.
- Garnish with chopped parsley if desired and serve hot.
Notes
Add diced jalapeños or red pepper flakes for extra heat.
Substitute pasta with tater tots or biscuit pieces for variation.
Assemble ahead and refrigerate up to 24 hours before baking; add 10 extra minutes to bake time.
Store leftovers in the refrigerator for up to 4 days.
Freeze for up to 2 months and thaw overnight before reheating.
