Hearty and comforting, these Smothered Beef Burritos are filled with seasoned ground beef, creamy refried beans, and melty cheese, all wrapped in warm tortillas and smothered in a rich, savory sauce. A satisfying Tex-Mex favorite that’s easy to make and perfect for family dinners or meal prep.
Ingredients
1 pound lean ground beef
1 packet taco seasoning mix
1/3 cup water
1 (16 oz) can refried beans
1 (10 oz) can cream of mushroom soup
1/2 cup sour cream
1/2 cup milk
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Salt and pepper to taste
6 large flour tortillas
2 cups shredded cheddar cheese
Chopped green onions, for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook the ground beef until browned; drain excess fat.
- Add taco seasoning and water to the skillet and simmer for 5 minutes until thickened.
- Stir in the refried beans and cook for another 2–3 minutes until heated through. Remove from heat.
- In a separate bowl, whisk together cream of mushroom soup, sour cream, milk, onion powder, garlic powder, salt, and pepper until smooth.
- Warm the tortillas slightly in the microwave to make them easier to roll.
- Spoon the beef and bean mixture into each tortilla, sprinkle some cheese inside, and roll up tightly.
- Place burritos seam-side down in the prepared baking dish.
- Pour the creamy sauce evenly over the burritos and top with remaining cheese.
- Bake uncovered for 25–30 minutes, until hot and bubbly.
- Garnish with chopped green onions before serving, if desired.

Use shredded rotisserie chicken instead of beef for a quicker version.
