Tender, seasoned chicken seared until golden and simmered in a rich, creamy gravy, served over fluffy rice for a comforting and satisfying home-cooked meal.
Ingredients
4 boneless, skinless chicken thighs or breasts
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
Salt, to taste
Black pepper, to taste
2 tbsp oil or butter
2 tbsp butter (for gravy)
1 small onion, finely chopped
2 garlic cloves, minced
2 tbsp all-purpose flour
1 1/2 cups chicken broth
1 cup heavy cream or half-and-half
1 tsp Dijon mustard (optional)
1/2 tsp thyme (dried or fresh)
1 cup long-grain white rice
2 cups water or broth (for rice)
Pinch of salt (for rice)
Instructions
- Combine rice, water (or broth), and salt in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15–18 minutes until liquid is absorbed. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
- Season chicken with garlic powder, onion powder, paprika, salt, and pepper.
- Heat oil or butter in a large skillet over medium heat. Sear chicken for 4–5 minutes per side until golden and cooked through (internal temperature 165°F/74°C). Remove and set aside.
- In the same skillet, melt butter. Sauté chopped onion for 3–4 minutes until softened. Add minced garlic and cook for 1 minute.
- Stir in flour and cook for 1–2 minutes to form a roux. Slowly whisk in chicken broth, then add cream and Dijon mustard.
- Add thyme, salt, and pepper. Simmer for 5–7 minutes, stirring, until thick and creamy.
- Return chicken to the skillet and spoon gravy over the top. Simmer gently for 5–10 minutes.
- Serve chicken and gravy over warm rice. Garnish with chopped parsley or green onions if desired.
Notes
Add sliced mushrooms when sautéing onions for extra flavor.
Sprinkle in a pinch of cayenne pepper for heat.
Stir in grated Parmesan cheese for a richer sauce.
Use half-and-half instead of heavy cream for a lighter option.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
