Description

Soft, chewy, and deliciously banana chocolate chip bars made with ripe bananas, coconut oil, and melty chocolate chips. These easy-to-make bars are perfect for any occasion!


Ingredients

2 ripe bananas, mashed

1/2 cup coconut oil, melted

1/2 cup brown sugar

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chocolate chips

1/2 cup chopped walnuts (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a large mixing bowl, mash the bananas until smooth. Add the melted coconut oil, brown sugar, and vanilla extract. Mix everything together until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  4. Fold in the chocolate chips and walnuts (if using).
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bars cool completely in the pan before slicing them into squares.

Notes

If you want extra chocolatey bars, add more chocolate chips or drizzle melted chocolate on top after baking.

If you prefer a nut-free version, skip the walnuts.

For a vegan version, swap coconut oil with plant-based oil and brown sugar with maple syrup or coconut sugar.

Store the bars in an airtight container at room temperature for up to 3 days or in the fridge for up to a week.

These bars can be frozen for up to 3 months. Wrap individual portions in plastic wrap or foil before freezing.
