Description

Soft Strawberry Cheesecake Cookies are tender vanilla cookies filled with creamy cheesecake flavor, fresh strawberries, and topped with a delicate vanilla glaze for a fruity, comforting dessert.


Ingredients

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 3/4 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup cream cheese, softened

1/2 cup fresh strawberries, finely diced

1/4 cup white chocolate chips (optional)

For the glaze:

1/2 cup powdered sugar

12 tablespoons milk

1/4 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  6. Gently fold in the cream cheese, diced strawberries, and white chocolate chips if using. Do not overmix.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12–15 minutes, until the edges are lightly golden and the centers are set.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled cookies and allow to set before serving.

Notes

Chill the dough for 20–30 minutes if cookies spread too much.

Frozen strawberries can be used if thawed and thoroughly drained.

Store cookies in an airtight container in the refrigerator for up to 4 days.

Let cookies sit at room temperature for 15–20 minutes before serving for best texture.

Freeze unglazed cookies for up to 2 months and glaze after thawing.
