A cozy and hearty casserole made with egg noodles, savory ground beef, tangy tomato sauce, and a creamy mixture of sour cream and cottage cheese, topped with melty cheddar cheese.
Ingredients
8 oz wide egg noodles
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 can (15 oz) tomato sauce
1 cup sour cream
1 cup small-curd cottage cheese
1/4 cup chopped green onions
1 1/2 cups shredded cheddar cheese
Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Cook the egg noodles according to package directions until al dente, then drain and set aside.
- In a large skillet over medium heat, cook the ground beef and chopped onion until beef is browned and onion is soft, about 5–7 minutes.
- Add the minced garlic, salt, pepper, and paprika; cook for another minute.
- Stir in the tomato sauce and let the mixture simmer on low for 5 minutes.
- In a separate bowl, mix the sour cream, cottage cheese, and green onions until well combined.
- Layer half of the cooked noodles in the prepared baking dish.
- Spread the sour cream mixture evenly over the noodles.
- Top with the remaining noodles.
- Pour the beef and tomato sauce mixture over the noodles evenly.
- Sprinkle shredded cheddar cheese on top.
- Bake uncovered for 25–30 minutes, until bubbly and cheese is melted.
- Let sit for 5 minutes before serving. Garnish with parsley if desired.
Notes
Cook noodles just until al dente to prevent mushiness after baking.
Can substitute ground turkey or chicken for a leaner version.
Try adding mozzarella with the cheddar for extra cheesiness.
Mix in red pepper flakes or jalapeños for a spicy kick.
Sautéed mushrooms or spinach can be added for more veggies.
Ricotta or Greek yogurt can replace cottage cheese.
Freezer-friendly: cool completely before freezing and wrap tightly.
