Ingredients
2 cups cooked chicken breast, shredded or chopped
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
Salt and pepper to taste
1 cup canned black beans, drained and rinsed
1 cup corn kernels (fresh, canned, or thawed)
1/2 cup diced red bell pepper
1/2 cup shredded cheddar cheese
1/4 cup chopped cilantro
1/2 cup sour cream or Greek yogurt
2 tablespoons salsa
Juice of 1/2 lime
4 large flour tortillas (10-inch)
Instructions
- Heat olive oil in a medium skillet over medium heat. Add the cooked chicken, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Stir and cook for 3 to 4 minutes until heated through.
- In a small bowl, mix sour cream or Greek yogurt with salsa and fresh lime juice to create the creamy Southwest sauce.
- Lay tortillas flat and spread a spoonful of sauce in the center of each tortilla.
- Evenly divide the seasoned chicken among the tortillas. Top with black beans, corn, diced red bell pepper, shredded cheese, and chopped cilantro.
- Drizzle additional sauce over the filling if desired.
- Fold in the sides of each tortilla and roll tightly into wraps.
- For a toasted finish, place wraps seam-side down in a heated skillet and cook for 1 to 2 minutes per side until golden and slightly crispy.
- Slice in half and serve immediately with extra sauce or salsa if desired.
