Ingredients
1 cup raw pumpkin seeds (rinsed and dried)
1 tablespoon olive oil
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cayenne pepper (adjust to taste)
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/2 teaspoon sea salt
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Place the cleaned and dried pumpkin seeds in a bowl and drizzle with olive oil, mixing until well coated.
- In a small bowl, combine all the spices and salt.
- Sprinkle the seasoning mix over the seeds and toss to coat thoroughly.
- Spread the seeds in a single layer on the prepared baking sheet.
- Roast for 35–40 minutes, stirring once halfway through, until golden and crispy.
- Let them cool completely before storing in an airtight container.
Notes
Add a pinch of brown sugar or maple syrup for a sweet-spicy version.
Swap in dried rosemary and thyme for a herby flavor.
Add lime zest after roasting for a zesty twist.
Use nutritional yeast for a cheesy flavor.
For a kid-friendly version, omit cayenne and chili powder.
