A cozy, comforting twist on traditional meatloaf made with Stove Top stuffing mix, keeping it moist, flavorful, and simple to prepare.
Ingredients
2 pounds ground beef
1 box Stove Top stuffing mix (any flavor)
1 cup water
2 large eggs
1/2 cup ketchup (plus more for topping)
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the stuffing mix and water. Let sit for 5 minutes to absorb.
- Add the ground beef, eggs, ketchup, onion powder, garlic powder, salt, and pepper.
- Mix gently until well combined, being careful not to overmix.
- Transfer the mixture into a greased loaf pan and shape into a loaf.
- Spread a generous layer of ketchup over the top.
- Bake for 55–60 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for about 10 minutes before slicing and serving.
Notes
Try using ground turkey or a mix of beef and pork for variety.
Add shredded cheddar cheese for a cheesy version.
Mix brown sugar into the ketchup for a sweeter glaze.
Sautéed onions or mushrooms can add extra texture and flavor.
Hot sauce or red pepper flakes can spice it up.
