Description

A cozy, comforting twist on traditional meatloaf made with Stove Top stuffing mix, keeping it moist, flavorful, and simple to prepare.


Ingredients

2 pounds ground beef

1 box Stove Top stuffing mix (any flavor)

1 cup water

2 large eggs

1/2 cup ketchup (plus more for topping)

1 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the stuffing mix and water. Let sit for 5 minutes to absorb.
  3. Add the ground beef, eggs, ketchup, onion powder, garlic powder, salt, and pepper.
  4. Mix gently until well combined, being careful not to overmix.
  5. Transfer the mixture into a greased loaf pan and shape into a loaf.
  6. Spread a generous layer of ketchup over the top.
  7. Bake for 55–60 minutes, or until the internal temperature reaches 160°F (71°C).
  8. Let the meatloaf rest for about 10 minutes before slicing and serving.

Notes

Try using ground turkey or a mix of beef and pork for variety.

Add shredded cheddar cheese for a cheesy version.

Mix brown sugar into the ketchup for a sweeter glaze.

Sautéed onions or mushrooms can add extra texture and flavor.
