Ingredients

23 tablespoons heavy cream (adjust for consistency)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour an 8-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until smooth.
  6. Gently fold in the mashed strawberries until evenly distributed.
  7. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. For the frosting, beat the butter in a medium bowl until smooth. Add powdered sugar, mashed strawberries, and vanilla extract. Gradually add heavy cream until the frosting reaches your desired consistency.
  10. Once the cake is completely cooled, spread the frosting evenly over the top and sides. Decorate with fresh strawberry slices if desired.

Notes

If using frozen strawberries, thaw and drain them first to avoid excess moisture.
