Ingredients
1 cup rolled oats
1/2 cup vanilla protein powder
1/2 cup freeze-dried strawberries, crushed
1/4 cup almond butter
2 tablespoons honey
1/4 cup Greek yogurt
1 teaspoon vanilla extract
Pinch of salt
Instructions
- In a large mixing bowl, combine the oats, protein powder, and crushed freeze-dried strawberries.
- Add the almond butter, honey, Greek yogurt, vanilla extract, and a pinch of salt to the bowl.
- Mix everything together until fully combined. If the mixture feels too dry, add a small amount of water or more yogurt until it reaches a dough-like consistency.
- Roll the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Refrigerate the protein balls for at least 30 minutes to firm them up.
- Once set, enjoy immediately or store them in an airtight container in the fridge for up to a week.
Notes
For a vegan version, swap Greek yogurt for dairy-free yogurt and honey for maple syrup or agave.
If you prefer a different protein powder flavor or brand, you can substitute as long as the consistency remains similar.
