Description

These Strawberry Cheesecake Stuffed Donuts are a delicious combination of fluffy, warm donuts filled with a creamy strawberry cheesecake filling and topped with a sweet glaze.


Ingredients

2 cups all-purpose flour

1/4 cup sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

2/3 cup milk

2 large eggs

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1/4 cup strawberry jam

1/2 teaspoon vanilla extract

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a donut pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, combine the milk, eggs, melted butter, and vanilla extract. Stir well to combine.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Spoon the batter into the donut pan, filling each cavity about halfway.
  6. Bake for 12-15 minutes, or until the donuts are lightly golden and a toothpick inserted comes out clean.
  7. While the donuts are cooling, prepare the filling by beating the cream cheese, powdered sugar, strawberry jam, and vanilla extract until smooth and creamy.
  8. Once the donuts have cooled slightly, use a piping bag or a small knife to create a hole in the center of each donut.
  9. Fill the donuts with the strawberry cheesecake mixture.
  10. To make the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  11. Dip the tops of the filled donuts into the glaze and allow the excess to drip off.

Notes

Storage: Store any leftover donuts in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate for up to 3 days.

Reheating: To reheat, microwave the donuts for about 10-15 seconds, or warm them in the oven at 300°F (150°C) for 5-7 minutes.

Variations: Swap the strawberry jam for raspberry, blueberry, or peach preserves for different fruit fillings.

For a twist, replace the strawberry jam with melted chocolate or chocolate syrup for a chocolate cheesecake filling.

To make donuts extra indulgent, add a sprinkle of cinnamon sugar on top before glazing or drizzle melted chocolate over the glaze.

If you don’t have a donut pan, you can bake the batter in a muffin tin and pipe in the filling once baked.
