These Strawberry Cheesecake Stuffed Donuts are a delicious combination of fluffy, warm donuts filled with a creamy strawberry cheesecake filling and topped with a sweet glaze.
Ingredients
2 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2/3 cup milk
2 large eggs
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
1/2 cup cream cheese, softened
1/4 cup powdered sugar
1/4 cup strawberry jam
1/2 teaspoon vanilla extract
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a donut pan.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, combine the milk, eggs, melted butter, and vanilla extract. Stir well to combine.
- Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.
- Spoon the batter into the donut pan, filling each cavity about halfway.
- Bake for 12-15 minutes, or until the donuts are lightly golden and a toothpick inserted comes out clean.
- While the donuts are cooling, prepare the filling by beating the cream cheese, powdered sugar, strawberry jam, and vanilla extract until smooth and creamy.
- Once the donuts have cooled slightly, use a piping bag or a small knife to create a hole in the center of each donut.
- Fill the donuts with the strawberry cheesecake mixture.
- To make the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Dip the tops of the filled donuts into the glaze and allow the excess to drip off.
Notes
Storage: Store any leftover donuts in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate for up to 3 days.
Reheating: To reheat, microwave the donuts for about 10-15 seconds, or warm them in the oven at 300°F (150°C) for 5-7 minutes.
Variations: Swap the strawberry jam for raspberry, blueberry, or peach preserves for different fruit fillings.
For a twist, replace the strawberry jam with melted chocolate or chocolate syrup for a chocolate cheesecake filling.
To make donuts extra indulgent, add a sprinkle of cinnamon sugar on top before glazing or drizzle melted chocolate over the glaze.
If you don’t have a donut pan, you can bake the batter in a muffin tin and pipe in the filling once baked.
