Description

These Strawberry Pineapple Popsicles are a refreshing, naturally sweet frozen treat made with real fruit, lemon juice, and optional natural sweeteners. They’re vegan, allergy-friendly, and perfect for warm-weather snacking.

Ingredients

1 ½ cups fresh or frozen strawberries

1 ½ cups fresh or canned pineapple chunks (in juice, not syrup)

2 tablespoons maple syrup or honey (optional, adjust to taste)

1 tablespoon lemon juice

½ teaspoon pure vanilla extract (optional)

Instructions

  1. Add strawberries, pineapple, maple syrup (if using), lemon juice, and vanilla extract to a high-speed blender.
  2. Blend until smooth.
  3. Taste and adjust sweetness if desired.
  4. Pour mixture into popsicle molds, leaving space at the top for expansion.
  5. Insert sticks and freeze for at least 4–6 hours or overnight.
  6. To serve, run the molds under warm water for a few seconds to release the popsicles.

Notes

Add mint leaves for a refreshing twist.

Substitute mango for strawberries for a tropical variation.

Blend in ½ cup of coconut milk for a creamy version.

Stir in chia seeds after blending for extra fiber and texture.

Store in an airtight container with parchment between popsicles to prevent sticking.
