Ingredients
1 ½ cups fresh or frozen strawberries
1 ½ cups fresh or canned pineapple chunks (in juice, not syrup)
2 tablespoons maple syrup or honey (optional, adjust to taste)
1 tablespoon lemon juice
½ teaspoon pure vanilla extract (optional)
Instructions
- Add strawberries, pineapple, maple syrup (if using), lemon juice, and vanilla extract to a high-speed blender.
- Blend until smooth.
- Taste and adjust sweetness if desired.
- Pour mixture into popsicle molds, leaving space at the top for expansion.
- Insert sticks and freeze for at least 4–6 hours or overnight.
- To serve, run the molds under warm water for a few seconds to release the popsicles.

Blend in ½ cup of coconut milk for a creamy version.
