Description

Creamy Greek yogurt and sweet strawberries are combined, frozen, and dipped in smooth chocolate for a refreshing no-bake treat. These poppable bites are perfect for a light dessert or freezer snack.


Ingredients

2 cups fresh strawberries, finely diced

1 cup plain Greek yogurt

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1 teaspoon coconut oil


Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, gently fold together the diced strawberries, Greek yogurt, honey or maple syrup, and vanilla extract until well combined.
  3. Using a tablespoon, scoop portions of the mixture onto the prepared baking sheet, spacing them slightly apart.
  4. Freeze for 1 to 2 hours, or until the yogurt bites are completely firm.
  5. Melt the chocolate chips with the coconut oil in a microwave-safe bowl in 20-second intervals, stirring between each interval, until smooth.
  6. Dip each frozen yogurt bite into the melted chocolate, coating completely.
  7. Return the coated bites to the parchment-lined sheet and freeze again for 15 to 20 minutes, or until the chocolate is set.
  8. Store in an airtight container in the freezer until ready to serve.

Notes

Swap strawberries for raspberries or blueberries for a different berry flavor.

Use thick coconut yogurt for a dairy-free option.

Sprinkle crushed granola or chopped nuts over the chocolate before it sets for added texture.
