Ingredients
2 cups fresh strawberries, finely diced
1 cup plain Greek yogurt
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
1 teaspoon coconut oil
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a medium bowl, gently fold together the diced strawberries, Greek yogurt, honey or maple syrup, and vanilla extract until well combined.
- Using a tablespoon, scoop portions of the mixture onto the prepared baking sheet, spacing them slightly apart.
- Freeze for 1 to 2 hours, or until the yogurt bites are completely firm.
- Melt the chocolate chips with the coconut oil in a microwave-safe bowl in 20-second intervals, stirring between each interval, until smooth.
- Dip each frozen yogurt bite into the melted chocolate, coating completely.
- Return the coated bites to the parchment-lined sheet and freeze again for 15 to 20 minutes, or until the chocolate is set.
- Store in an airtight container in the freezer until ready to serve.
Notes
Swap strawberries for raspberries or blueberries for a different berry flavor.
Use thick coconut yogurt for a dairy-free option.
Sprinkle crushed granola or chopped nuts over the chocolate before it sets for added texture.
