A bright and zesty one-bowl Limoncello Ricotta Snack Loaf that’s tender, moist, and full of citrus flavor. Perfect for brunch, dessert, or an afternoon treat.
Ingredients
1 cup all-purpose flour
1/2 cup almond flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3/4 cup sugar
Zest of 2 lemons
1/3 cup limoncello liqueur
3/4 cup ricotta cheese (whole milk preferred)
1/4 cup plain yogurt or sour cream
1/4 cup olive oil or melted coconut oil
2 large eggs
1 tsp vanilla extract
Optional: powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, salt, sugar, and lemon zest.
- Add the limoncello, ricotta, yogurt, oil, eggs, and vanilla extract directly into the dry ingredients and mix until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
- Cool the loaf in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar if desired before serving.
Notes
For an alcohol-free version, replace limoncello with fresh lemon juice.
Sprinkle slivered almonds on top before baking for added crunch.
Fold in blueberries or raspberries for a fruity variation.
Drizzle with lemon glaze instead of powdered sugar for a dessert finish.
Store at room temperature for up to 3 days or refrigerate for up to 5 days.
To freeze, wrap slices individually in plastic wrap and store for up to 2 months.
Reheat slices in the microwave for 10–15 seconds or toast lightly.
