Ingredients
4 cups fresh or frozen peaches, sliced
1/2 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1/2 cup milk
1/2 cup brown sugar, packed
1/4 teaspoon ground cinnamon
Instructions
-
Preheat the oven to 350°F (175°C).
-
In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, and vanilla extract. Stir to coat the peaches evenly and set aside.
-
In another bowl, mix together the flour, baking powder, salt, and brown sugar. Stir in the melted butter and milk until a thick batter forms.
-
Pour the peach mixture into a greased 9×9-inch baking dish, spreading it evenly across the bottom.
-
Drop spoonfuls of the batter over the peaches, covering as much of the surface as possible. It’s okay if some of the peaches are exposed.
-
Sprinkle ground cinnamon over the top of the batter for extra flavor.
-
Bake for 45-50 minutes, or until the top is golden brown and the peaches are bubbling around the edges.
-
Let it cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
To make the topping crispier, add extra butter to the batter or sprinkle coarse sugar on top before baking.
Frozen peaches can be used but should be thawed and drained to avoid excess liquid.
Feel free to swap peaches with other fruits like berries or apples. Adjust the baking time as needed.
This recipe can be prepared in advance by storing the peach mixture and batter separately in the fridge. Assemble before baking for a fresh cobbler.
