Ingredients

2 cups all-purpose flour

1 cup buttermilk

2 large eggs

1 teaspoon vanilla extract

1 cup chopped pecans, toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until evenly combined.
  3. In another bowl, beat the eggs lightly. Add the buttermilk, melted butter, and vanilla extract, stirring until well mixed.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined—do not overmix.
  5. Fold in the toasted pecans gently.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the bread starts to brown too quickly, tent with foil.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Optional: Dust the cooled bread with powdered sugar before slicing and serving.

This bread freezes well—slice before freezing for easy toasting later.

To substitute buttermilk, mix 1 tbsp lemon juice or white vinegar with 1 cup milk and let sit for 5 minutes.

Toasting pecans enhances flavor and crunch, but raw pecans can be used in a pinch.
