Ingredients
4 boneless, skinless chicken breasts or thighs
1 cup pineapple chunks (fresh or canned, drained)

1 tbsp rice vinegar
1 tsp garlic powder
1 tsp grated ginger (optional)
1 tbsp cornstarch (optional, for thickening)

Instructions
- Place the chicken breasts or thighs in the Crockpot.
- In a bowl, combine pineapple chunks, barbecue sauce, honey, soy sauce, rice vinegar, garlic powder, and grated ginger if using. Stir well.
- Pour the sauce mixture over the chicken, ensuring it is fully coated.
