Description

These Sweet Potato Pie Bars feature a buttery graham cracker crust topped with a smooth, warmly spiced sweet potato filling. They deliver all the cozy flavors of classic sweet potato pie in an easy-to-slice dessert bar.


Ingredients

1 ½ cups graham cracker crumbs (or crushed vanilla wafers)

½ cup melted butter

¼ cup brown sugar

2 cups mashed sweet potatoes (about 2 medium sweet potatoes)

½ cup brown sugar

2 eggs

½ cup evaporated milk

1 tsp vanilla extract

1 tsp cinnamon

½ tsp nutmeg

¼ tsp salt

Whipped cream or marshmallow fluff (optional)

Chopped pecans (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix the graham cracker crumbs, melted butter, and ¼ cup brown sugar until combined. Press firmly into the bottom of the prepared pan to form an even crust.
  3. Bake the crust for 10 minutes, then remove from the oven and let cool slightly.
  4. In a separate bowl, whisk together the mashed sweet potatoes, ½ cup brown sugar, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt until smooth and creamy.
  5. Pour the filling evenly over the pre-baked crust.
  6. Bake for 35–40 minutes, or until the center is set with a slight jiggle and a toothpick inserted near the center comes out mostly clean.
  7. Allow the bars to cool completely before slicing.
  8. Top with whipped cream or marshmallow fluff and sprinkle with chopped pecans if desired, then cut into bars and serve.

Notes

Swap graham cracker crumbs with crushed gingersnaps for a deeper spiced flavor.

Replace part of the evaporated milk with heavy cream for a richer filling.

Drizzle with caramel sauce for extra sweetness.

Store in an airtight container in the refrigerator for up to 4 days.

Freeze without toppings for up to 2 months and thaw overnight in the refrigerator.

Reheat individual bars in the microwave for 10–15 seconds if desired.

Drain canned sweet potatoes well before mashing and measuring.
