Description
These Sweet Potato Pie Bars feature a buttery graham cracker crust topped with a smooth, warmly spiced sweet potato filling. They deliver all the cozy flavors of classic sweet potato pie in an easy-to-slice dessert bar.
Ingredients
1 ½ cups graham cracker crumbs (or crushed vanilla wafers)
½ cup melted butter
¼ cup brown sugar
2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
½ cup brown sugar
2 eggs
½ cup evaporated milk
1 tsp vanilla extract
1 tsp cinnamon
½ tsp nutmeg
¼ tsp salt
Whipped cream or marshmallow fluff (optional)
Chopped pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix the graham cracker crumbs, melted butter, and ¼ cup brown sugar until combined. Press firmly into the bottom of the prepared pan to form an even crust.
- Bake the crust for 10 minutes, then remove from the oven and let cool slightly.
- In a separate bowl, whisk together the mashed sweet potatoes, ½ cup brown sugar, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt until smooth and creamy.
- Pour the filling evenly over the pre-baked crust.
- Bake for 35–40 minutes, or until the center is set with a slight jiggle and a toothpick inserted near the center comes out mostly clean.
- Allow the bars to cool completely before slicing.
- Top with whipped cream or marshmallow fluff and sprinkle with chopped pecans if desired, then cut into bars and serve.
Notes
Swap graham cracker crumbs with crushed gingersnaps for a deeper spiced flavor.
Replace part of the evaporated milk with heavy cream for a richer filling.
Drizzle with caramel sauce for extra sweetness.
Store in an airtight container in the refrigerator for up to 4 days.
Freeze without toppings for up to 2 months and thaw overnight in the refrigerator.
Reheat individual bars in the microwave for 10–15 seconds if desired.
Drain canned sweet potatoes well before mashing and measuring.
