Description

Ingredients

2 cups mashed sweet potatoes (about 2 large sweet potatoes)

1 cup evaporated milk

3/4 cup sugar

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 unbaked 9-inch pie crust


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the sweet potatoes for 15–20 minutes until fork-tender. Drain well and mash until completely smooth.
  3. In a large mixing bowl, combine the mashed sweet potatoes, sugar, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth and creamy with no lumps.
  4. Pour the filling evenly into the unbaked 9-inch pie crust and smooth the top.
  5. Bake for 50–55 minutes, or until the center is set and a knife inserted into the middle comes out clean.
  6. Remove from the oven and allow the pie to cool completely before slicing and serving.

Notes

Add 1 tablespoon melted butter to the filling for extra richness.

For deeper spice flavor, include a pinch of ground cloves or ginger.

Substitute part of the sugar with brown sugar for a subtle caramel note.

Top with whipped cream or a dusting of cinnamon before serving.

Store covered in the refrigerator for up to 4 days.

Freeze tightly wrapped for up to 2 months and thaw overnight in the refrigerator.
