Description
A hearty fusion of pizza and burger flavors, these baked burrito-style pizza burgers are wrapped in tortillas, filled with cheesy beef and beans, baked in enchilada sauce, and topped with sour cream, tomato, and cilantro.
Ingredients
1 lb (450 g) ground beef
1 can refried beans
1 medium onion, chopped
2 cloves garlic, minced
1 packet taco seasoning
1/2 cup (120 ml) water
4 large flour tortillas
1 cup (about 100 g) shredded cheddar cheese
1 cup (about 240 ml) enchilada sauce
1 cup (about 240 ml) sour cream
1 medium tomato, diced
1/4 cup (about 4 tbsp) chopped cilantro
Salt and pepper to taste
Instructions
- Preheat the oven to 375 °F (190 °C).
- In a skillet over medium heat, cook the ground beef with chopped onion and minced garlic until the meat is browned. Drain excess fat.
- Stir in refried beans, taco seasoning, and water. Cook until combined and heated through.
- Warm the tortillas in the microwave for about 20 seconds to make them pliable.
- Spread the beef and bean mixture down the center of each tortilla, sprinkle with cheddar cheese, and roll them up tightly.
- Place rolled tortillas seam-side down in a baking dish. Pour enchilada sauce over the top and sprinkle with remaining cheese.
- Bake for 20 minutes, until the cheese is melted and bubbly.
- Serve hot, topped with sour cream, diced tomato, and chopped cilantro.
Notes
Swap ground beef with ground turkey or plant-based meat for a lighter or vegetarian version.
Add chopped jalapeños or spicy enchilada sauce for more heat.
Mix in black beans or corn for added texture.
Try pepper jack or mozzarella instead of cheddar for a flavor twist.
Top with guacamole or hot sauce instead of sour cream for variety.
