This Teriyaki Ground Beef Stir-Fry is a quick and flavorful dinner made with lean ground beef, fresh vegetables, and a homemade teriyaki sauce. Perfect for busy weeknights, it’s a one-pan meal served best over rice and ready in just 25 minutes.
Ingredients
1 lb lean ground beef
2 tablespoons sesame oil
1 small onion, diced
3 garlic cloves, minced
1 tablespoon fresh ginger, grated
1 red bell pepper, sliced
1 cup broccoli florets
1/2 cup shredded carrots
3 green onions, chopped
1/4 cup low-sodium soy sauce
2 tablespoons honey or maple syrup
1 tablespoon rice vinegar
1 tablespoon cornstarch
1/2 cup water
Sesame seeds, for garnish
Cooked rice, for serving (optional)
Instructions
- In a small bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, cornstarch, and water. Set aside.
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add ground beef and cook for 5–6 minutes, breaking it up as it browns.
- Drain excess fat if needed, then add diced onion, minced garlic, and grated ginger. Cook for 2 minutes.
- Add red bell pepper, broccoli, and shredded carrots. Stir-fry for 5–7 minutes until vegetables are tender-crisp.
- Pour in the prepared teriyaki sauce, stir to coat, and simmer for 2–3 minutes until the sauce thickens.
- Stir in chopped green onions, remove from heat, and sprinkle with sesame seeds.
- Serve hot over cooked rice, if desired.
