Description

This Teriyaki Ground Beef Stir-Fry is a quick and flavorful dinner made with lean ground beef, fresh vegetables, and a homemade teriyaki sauce. Perfect for busy weeknights, it’s a one-pan meal served best over rice and ready in just 25 minutes.


Ingredients

1 lb lean ground beef

2 tablespoons sesame oil

1 small onion, diced

3 garlic cloves, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, sliced

1 cup broccoli florets

1/2 cup shredded carrots

3 green onions, chopped

1/4 cup low-sodium soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon cornstarch

1/2 cup water

Sesame seeds, for garnish

Cooked rice, for serving (optional)


Instructions

  1. In a small bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, cornstarch, and water. Set aside.
  2. Heat sesame oil in a large skillet or wok over medium-high heat.
  3. Add ground beef and cook for 5–6 minutes, breaking it up as it browns.
  4. Drain excess fat if needed, then add diced onion, minced garlic, and grated ginger. Cook for 2 minutes.
  5. Add red bell pepper, broccoli, and shredded carrots. Stir-fry for 5–7 minutes until vegetables are tender-crisp.
  6. Pour in the prepared teriyaki sauce, stir to coat, and simmer for 2–3 minutes until the sauce thickens.
  7. Stir in chopped green onions, remove from heat, and sprinkle with sesame seeds.
  8. Serve hot over cooked rice, if desired.

Notes

Swap ground beef with ground turkey or chicken for a leaner version.

Use tofu or tempeh for a vegetarian option.
