Description

This Thai Coconut Curry Dumpling Soup is a warm, comforting dish featuring a rich coconut curry broth, tender dumplings, and fresh vegetables. It’s quick to make, deeply flavorful, and easily customizable for different diets and spice levels.


Ingredients

1 tablespoon cooking oil (vegetable or sesame)

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons red Thai curry paste

4 cups vegetable or chicken broth

1 can (13.5 oz / ~400 ml) full-fat coconut milk

2 tablespoons soy sauce

1 tablespoon lime juice (freshly squeezed)

1 teaspoon brown sugar

2 carrots, thinly sliced

1520 frozen dumplings (pork, chicken or veggie)

2 cups baby spinach or chopped bok choy

2 scallions, sliced (for garnish)

Fresh cilantro, chopped (for garnish)


Instructions

  1. Heat oil in a large pot over medium heat. Sauté the garlic and ginger for 1–2 minutes until fragrant.
  2. Add the red Thai curry paste and cook for 1 minute to release its aroma.
  3. Pour in the broth and coconut milk, whisking until combined and smooth.
  4. Stir in the soy sauce, lime juice, and brown sugar. Let the soup simmer for 5–7 minutes to meld the flavors.
  5. Add the sliced carrots and cook for 3–4 minutes until they begin to soften.
  6. Add the frozen dumplings and cook according to package instructions, typically 6–8 minutes.
  7. Stir in the spinach or bok choy and cook for 1 minute until wilted.
  8. Ladle the soup into bowls and garnish with sliced scallions and chopped fresh cilantro. Serve hot.

Notes

Use any dumplings you prefer—pork, chicken, shrimp, or plant-based.

Add chili garlic sauce or red pepper flakes for extra heat.

Swap spinach or bok choy with kale or napa cabbage if desired.

Store leftovers in the fridge for up to 3 days. Reheat gently on the stove with a splash of water or broth if needed.

Not recommended for freezing as dumpling texture may change.
